Ingredients for the Prawns:
- 1kg of large prawns, deveined and peeled
- 1 red onion, chopped
- 3 garlic cloves, minced
- 2 tbsp of Swahili spice mix (can be found in local markets or online)
- 1 tbsp of tomato paste
- 1 can of diced tomatoes
- 1 tbsp of freshly squeezed lime juice
- Salt and pepper to taste
- 2 tbsp of cooking oil
- Fresh coriander for garnish
Ingredients for the Coconut Rice:
- 2 cups of basmati rice
- 1 can of coconut milk
- 1 1/2 cups of water
- 1 tsp of salt
- 1 cinnamon stick
Instructions:
- Begin by preparing the prawns. Heat the oil in a large pan over medium heat.
- Add the chopped onions and sauté for about 2-3 minutes, until translucent.
- Add the minced garlic and Swahili spice mix and cook for an additional minute.
- Add the tomato paste and diced tomatoes to the pan and stir well.
- Allow the mixture to cook for 5-7 minutes, until it starts to thicken.
- Add the prawns to the pan and stir well to coat them in the sauce.
- Cook the prawns for 5-7 minutes, until they turn pink and are fully cooked.
- Add lime juice and season with salt and pepper to taste.
- Garnish with fresh coriander.
Instructions for Coconut Rice:
- Rinse the rice in cold water until the water runs clear.
- In a large pot, combine the rice, coconut milk, water, salt, and cinnamon stick.
